The state of the human body when more than the necessary amount of cholesterol circulates in the blood is known as high cholesterol. Cholesterol is an essential component of our body, but too high an amount of it leads to heart disease. This condition is the result of various factors. These include old age, sedentary lifestyle, and certain diseases. High cholesterol levels are often thought to be hereditary, thus a family history of the syndrome also increases risks.

-High intake of carbohydrates also increases cholesterol. Refined flour must be substituted by whole grains and whole grain flour.
-Milk and dairy products must be low fat or skimmed.
-Lean meats such as chicken and turkey are a healthier option than red meats such as beef and goat. However giving up meat altogether is the best option.
-Olive oil and canola oil are high in unsaturated fats and thus healthier oils. These should be used for cooking and salad dressings.

High Cholesterol Foods

One of the ironies/tragedies of our life (especially for foodies) is that the better the taste of a food, the higher seems to be its cholesterol content. High cholesterol foods are those which have high amounts of saturated fat, dietary cholesterol, and trans-fats. High cholesterol foods are also low in fiber content. Common high cholesterol foods are French fries, all types of fast food such as burgers, chips, foods containing eggs and refined flour and sugar such as pastries, cookies, cakes, chocolates and other sweets. Two basic components in food lead to high cholesterol. These are:

The following are the foods to avoid high that contain high cholesterol: butter, eggs, ice-cream, cream, cheese, whole milk dairy products, shrimp, organ meats like kidney and brain, duck, goose, and all foods containing saturated fats and oils such as beef, veal, egg yolks, fried food, fast food items, coconut, commercially baked foods, processed meat, palm oil, margarine, and ice-cream.

True Cholesterol Count

When you get a cholesterol measurement, unless you ask for a breakdown,  chances are you are given a single total.  It may or may not be bad if that number is high, depending upon the breakdown.  If the HDL is high, there maybe no problem. However, if it is your LDL that is high, you could be in trouble.  In order to find out if your are at risk,  ask your doctor for  fractionated cholesterol test. This test compares  your HDL lever to your total cholesterol count and gives you an index.  

The lower your index the lower your risk.  An index of 4 or lower is considered low risk,  For example, if your total cholesterol level is 200 but your HDL is 50 your index is 4 (50 goes into 200 four times.)  If on the other hand your total cholesterol level is 200 but your HDL lever is only 25 you are at greater risk — your risk index is 8 ( 25 into 200 eight times.)  To lower your LDL, eliminate all full fat dairy products from your diet Avoid all saturated fats, such as those found in butter, beef, veal, pork, lamb and the skin of poultry.

What About Cholesterol?

Cholesterol is fat in a wax like form. It comes primarily in animal fats that are saturated or solid for example, lard, butter, cheese, egg yokes, and the fat in meats.  Cholesterol is not all bad. It forms a major part of cell membranes, comprises the lining of the nerves, and composes much of the brain tissue.  Clearly, a certain amount of cholesterol is necessary for good health.  It becomes a problem, however, when it begins to line the arteries and block the flow of blood to the heart.

Most doctors agree that your cholesterol level should not exceed 200 milligrams.  To further complicate the matter, there is good cholesterol, and bad cholesterol.  Good Cholesterol high-density lipoprotein (HDL) functions to remove the cholesterol that can clog the arteries from the body and to transport it back to the liver for conversion into bile acids and subsequent elimination through the intestine.

Bad Cholesterol low-density lipoprotein (LDL) is the cholesterol that can line the arterial walls, narrowing them and hindering the passage of blood to the organs of the body.  It is easy to see how heart disease can develop from such a condition.  The dietary goal is to keep the LDL cholesterol lever down to a point where it will not build up in the arteries and to raise the HDL in order to keep the LDL away from the tissues and arteries.
